Chilled Shabu-Shabu Noodles with Sesame Sauce

A soul satisfying dish of chilled somen noodles topped with shabu-shabu pork. Noodles by themselves tend to feel bland, but this recipe combines meat and vegetables for a delicious and balanced meal in one plate. Perfect for the hotter summer months, this appetizing dish is enhanced with vinegar and garlic flavored sesame sauce.

Instructions

STEP 1

Add the salt and sake to 3 to 4 cups of boiling water (enough water to boil the pork in). Add the thinly sliced pork into the water and cook until the pork is no longer pink. Remove the pork and drop into a bowl of cold water to cool. Remove and pat the pork dry. *The sake helps to remove the undesired fragrance of the pork.

STEP 2

Cut the cucumber and lettuce into thin strips. Remove the outer layer of the white portion of the leek and cut it into thin stips and soak in cold water. Chop the inner core of the leek and combine with ingredients A.

STEP 3

Boil the somen noodles in plenty of water and drain with strainer. Chill the noodles in cold water and drain once again.

STEP 4

Serve the noodles in a bowl, add the cut lettuce and cucumber on top of the noodles. Add the Japanese leek, pork and thread pepper. Pour mixture A over the top and enjoy!
