Matcha Soy Milk Brulee

You’re sure to love this green tea-flavored brûlée! This recipe makes use of soy milk instead of fresh cream, so you don’t have to worry about high calorie intake. Smooth and creamy with a crisp, caramelized top, this green tea dessert is a surefire crowd pleaser.

2 tsps (5 g)
Soy milk
200 ml
Vanilla essence

Granulated sugar (when using a kitchen torch)

Instructions

STEP 1

<preparation> Preheat the oven to 338℉(170℃).

STEP 2

Combine the egg yolks and the A ingredients in a bowl. Whisk well.

STEP 3

Warm the soy milk to about 140°F (60°C). Add the vanilla essence and mix. Slowly whisk in the milk mixture to the bowl of eggs from STEP2.

STEP 4

Pour the mixture into ramekins and place in a deep baking tray. Pour hot water into the tray until it becomes half-full.

STEP 5

Bake in an oven at 338℉(170℃) for 20 minutes until it hardens, let cool, and chill in the refrigerator.

STEP 6

Coat with granulated sugar and caramelize with a kitchen torch. (If you don't have a torch, you can enjoy it as it is.)
