Instructions

STEP 1

Peel and chop the onion. Place in a heat-resistant bowl, add ingredients A, then mix. Without using plastic wrap, microwave for about 20-30 seconds.

STEP 2

Wash the potatoes with the skin still on. Microwave for 5 minutes without plastic wrap, then peel while still hot. Place in a bowl and mash.

STEP 3

Add ingredients B to the mashed potatoes along with the onions.

STEP 4

Spread the mashed potatoes in a tray and put them in the freezer for about 30 minutes.

STEP 5

After cooling, divide the mashed potatoes into 6 equal parts, then shape them into ovals. Place them onto a tray and put them back in the freezer for another 30 minutes.

STEP 6

Mix ingredients C in a bowl. Use this to cover the potatoes from step 5, then fry in oil at 365°F (180°C) or until the croquettes turn golden brown.

STEP 7

Drain excess oil. Serve with tomato ketchup.
  • The mashed potatoes will have a consistency that's close to cream corn when you first mix the ingredients in the freezer. Make sure you put them in a tray and freeze first so that the mixture holds together and you can easily shape it into croquettes.
