Fried Noodles with Starchy Sauce

A Japanese-style fried noodle dish flavored with soy sauce and ginger. The hot sauce is served over slightly charred savory noodles. The sauce contains plenty of vegetables together with pork, making it nutritionally balanced choice!

  • 0.1  lb Thinly sliced pork belly
  • 1.76  oz Peeled shrimp
  • a little Salt
  • a little Pepper
  • 1.23  oz Carrot
  • 1.76  oz Japanese leek / scallions
  • 3.17  oz Bok choy
  • pieces Kikurage(wood ear) mushroom
  • tbsp Vegetable oil
  • 0.5  piece Thinly sliced ginger
    • A
    • 1.5  tbsp Chicken soup (granulated)
    • 1.06  cup Water
    • 0.5  tbsp Sake
    • 0.5  tbsp Sugar
    • a little Salt
    • a little Pepper
  • tbsp Potato starch
  • tbsp Water (for water-soluble potato starch)
  • Yakisoba noodles (pre-steamed chinese noodles)
  • 0.5  tbsp Soy sauce

Instructions

Step 1

Cut carrots into thin strips, slice leeks diagonally, and cut bok choy into chunks. Soak Kikurage mushrooms in lukewarm water to soften, and remove the pith.

Step 2

Cut the pork into bite-sized pieces. Place the pork and shrimp in separate bowls and sprinkle with salt and pepper to taste.

Step 3

Heat vegetable oil in a frying pan and fry ginger, then add pork, shrimp and all other vegetables. Add ingredients (A) and bring to a boil. Dissolve 1 tbsp of potato starch in 2 tbsp of water. Add to the mixture.

Step 4

Boil the Chinese steamed noodles in hot water, drain, place in a bowl, add soy sauce and mix well.

Heat vegetable oil in pan, add half of the noodle and brown on both sides, pressing down with a spatula. Grill the other potion in the same way. Serve the noodles on a plate and pour the sauce over the top of them. Enjoy!
