Carrot with Peanut Butter & Miso

The saltiness of the peanut butter and the sweetness of the carrots combine to make an irresistible dish. It is easy to prepare, just mix peanut butter, olive oil and other seasonings and combine with carrots. This is a tasty and healthy way to use up those leftover carrots in your refrigerator.

  • 15.87  oz Carrots
  • pinches Salt
  • tbsp Peanut butter (unsweetened)
  • tbsp Olive oil
  • tsp Soy sauce
  • tsp Miso

Instructions

Step 1

Peel the carrots and slice them thinly with a peeler. Massage the salt into the carrots with your hands.

In a bowl, mix peanut butter, olive oil, soy sauce and miso. Combine with carrots and you're done!

Tips

The carrots will become soft and add to the flavor if you let the dish sit after preparation.
