Freeze-Dried Tofu and Broad Beans in Sesame Sauce
Freeze-dried tofu is known as "koya tofu" in Japanese. It's a common ingredient in Japan and people love it for its unique texture. Combine it with beans and vegetables and you have a healthy and refreshing side dish that goes well with any meal.

Broad beans (take out of pods)

Rehydrate the koya tofu by soaking it in water. Drain the excess water afterward. Cut the tofu first in two halves, then cut each half into 5mm wide slices. Put ingredients A in a pot and bring to a boil, add the tofu and lightly simmer for a few minutes.
Boil the broad beans before the peeling skin.
Shred the carrots and slice the green beans diagonally before boiling.
Combine the tofu, broad beans, carrots, and green beans. Dress with mixed ingredients B.
