Bring a pot of water to a boil, cook the udon noodles, and strain.
Cut the pork ribs into bite-sized pieces. Shred the cabbage. Slice the onion into long strips. Julienne the green pepper and carrot.
Heat vegetable oil in a pan and stir fry the meat and vegetables. Once the meat has browned and the vegetables have softened, add the noodles and stir fry for a few more minutes.
