Chicken Dumpling Soup

In this article, we will look at a healthy chicken dumpling and spring onion (sumashi) soup. The soup has a transparent broth lightly seasoned with dashi, salt and soy sauce. Different from the more well known miso soup, the yuzu peel to top off the dish adds to its freshness.

Ingredients

  • 0.25  stalk Spring onion
  • 0.2  lbs Ground chicken
  • 0.25  egg Egg (beaten)
  • tsp Potato starch
  • to taste Salt
    • A
    • 1.69  cup Dashi stock
    • tbsp Usukuchi soy sauce (light color)
    • 0.25  tsp Salt
  • as desired Spring onion
  • as desired Yuzu peel

Instructions

Step 1

Finely chop spring onion.

Step 2

Combine the ground chicken, chopped spring onion, beaten egg, potato starch and salt in a bowl, knead well and roll into bite-sized meatballs.

Step 3

Microwave the meatballs for 3 minutes in a microwave safe dish.

Step 4

Place the meatballs from step 3 and the ingredients in "A" into a microwave safe bowl. Heat in microwave for 2 minutes.

Step 5

Serve in a bowl and top with chopped spring onion and yuzu peel.
