In this article, we will look at a healthy chicken dumpling and spring onion (sumashi) soup. The soup has a transparent broth lightly seasoned with dashi, salt and soy sauce. Different from the more well known miso soup, the yuzu peel to top off the dish adds to its freshness.
- 0.25 stalk Spring onion
- 0.2 lbs Ground chicken
- 0.25 egg Egg (beaten)
- 1 tsp Potato starch
- to taste Salt
- 1.69 cup Dashi stock
- 1 tbsp Usukuchi soy sauce (light color)
- 0.25 tsp Salt
- as desired Spring onion
- as desired Yuzu peel
Finely chop spring onion.
Combine the ground chicken, chopped spring onion, beaten egg, potato starch and salt in a bowl, knead well and roll into bite-sized meatballs.
Microwave the meatballs for 3 minutes in a microwave safe dish.
Place the meatballs from step 3 and the ingredients in "A" into a microwave safe bowl. Heat in microwave for 2 minutes.
Serve in a bowl and top with chopped spring onion and yuzu peel.
