Crack the eggs into a bowl, add 1 tbsp of sugar, and whisk. Once it has sufficiently foamed, add the remaining sugar in 2 to 3 portions and mix until the dough reaches the ribbon stage.
Sieve A into the bowl of STEP 1 and lightly mix with a rubber spatula. Add milk and mix further.
Line a baking tray with parchment paper and pour in the batter from STEP 2. Bake in an oven preheated to 356℉ (180℃) for 10 minutes.
Take the cake from the oven and let it cool.
Put B in a bowl and whisk until stiff peaks form. Add the chocolate chips and mix.
When the cake has cooled, apply the cream mixture from STEP 5 onto one side. Take one end of the cake and gently roll from one end to the other. Wrap the cake in cloth to help it take shape.
Unwrap and slice to serve.
